I want to ensure I no longer see posts from a certain individual, if I go onto their profile and click 'Ignore User' will I stop seeing their posts in a discussion?

Yes. You will still see their username/reply box but the content will be edited to something like, "This post is not displayed because this user is on your ignore list".

And if it works here the same as other sites I've been on, you can sneak a peak at their posts without changing the ignore status, but then you'll be tempted to be drawn back in...
