These are the new 2TB Hitachi Deskstar HD32000 IDK/7K 2TB 7200 RPM SATA 3.0Gb/s 3.5"

Thank you for your insight on the card placement. I may consider that move.

I have now infact tried the RAID set up via Disk Manager in the Xserve. Believe it or not, it appears to have done it without destroying the volumes the Areca has created. After the RAID was created, it appeared as expected on the Desktop ready for sharing.. (RAID 6 now 13TB)

When I run the ArecaHTTP set up and ask it to check the volumes, it comes back showing me all are there and in normal operation. This wouldn't be the case if the Xserve had overwritten the volumes as a software raid. So I'm thinking I may be done! ;) I will be testing in the coming days and report back.

I will also look into the gains I may achieve by having the enclosure converted to SAS connections. For the moment, all seem happy where they are. We'll see if that remains true when I start using them!

Hope the testing goes well, especially the response to failures. ;)

EDIT:
I checked on those drives, and they're not yet passed for SAS based cards (still testing, according to the HDD Compatibility List on Areca's site - Dec. 17, 2009 is the date on the list). So it looks like you got lucky. :D
I'd advise watching them carefully.
