Just stop using Apple Devices as everyone has been telling you for a while. It's as if you wanted to make it a matter of principle to run into issues with that app and then complain. It's obvious that it's not working properly for you, so you're best off if you just stop using it, and use OTA or iTunes instead.
How can I stop using an app I don't generally use? I use iTunes 90% of the time, but I've tried formatting with both apps, and both iTunes and Apple Device Manager deleted my eSIM when I restored with them. It's not a matter of stopping using one app or the other; the main issue, which is the eSIM deletion, was that both apps deleted it. Now, Apple has created a section on their website, dated November 12th, specifying that the eSIM isn't deleted, but it only mentions the Apple Device Manager app. I understand that if I try to restore again, I should try with that app since it's the one Apple itself indicates should be used, even though I'll continue using iTunes for my backups and syncing.
 
What do you mean by “format”. Would help if you outlined the steps you take. They should basically be:


1. Open iTunes
2. Plugin your phone to the pc and wait for it to show in iTunes.

MAKE AN ENCRIPTED BACKUP !!!


3. Press volume up, volume down then press and hold side button until you see the connected to pc message.
4. Then follow the prompts to restore.

The pc will download the correct file. When that’s complete just follow the prompts.
I always follow the steps you outlined to restore my SIM, and I lost my eSIM. That's why I think there's something else going on, maybe at the carrier level or something, that influences whether it gets erased or not.
 
In this beta version, the screen doesn't turn off when I'm on a call. I'm on a call with it in my pocket, and I can feel it pressing keys. Once, when I took it out, it was on the camera, and I have the shortcut disabled; I don't know how it accessed it. I tested it now, and indeed, even when covering the sensors, the screen doesn't lock or prevent it from turning on during a call. When not on a call, it seems to work correctly.
 
I don't understand anything. I restarted my phone; I hadn't done it since the update. When it booted up and was on the screen asking for the SIM card PIN and phone access, I forced a restart. To my surprise, when it booted up, both SIM cards were entered with the PINs. What a crazy beta!
 
I have used Apple's Recovery Mode (like but not the same as DFU) to test SDP removal, and my eSIM remained intact and activated (UK Spusu carrier). Maybe the DFU is harsher
EDIT: or maybe it is just Spain!
Certainly the erase all data and settings asks to keep or erase eSIM. Recovery mode doesn't offer the option.
The only way I see someone “losing” an eSIM to a reset is if IMEI somehow gets reset (unlikely) or it’s not properly registered with the carrier.

During boot the phone reaches out to the network, advertising the IMEI and syncing service info to establish connectivity. No different than what a physical SIM provides.

If this eSIM “loss” has occurred multiple times on the same device then perhaps the device is faulty. If multiple devices I’d check with the carrier to ensure the IMEI is getting registered properly.

Yeah I'm having this issue as well on my 17 Pro, tapping the Weather widget does nothing. Have to tap it a few times on different spots.
I confirm. I have this problem with weather widgets, and not just the default weather app. I rolled back to B2, and everything is fine, including the battery life.

With Spain carriers a reset deletes the eSIM, for many carriers, so it’s not unlikely, is the carrier policy.
