For a total newbie on this, does this mean that if a have a problem with my non jailbroken 4S and I need to restore to 5.0 I wot be able to?
How does my local computer and iTunes know that there is something newer than 5.0 if I refuse it an Internet connection to check?

Since the untethered isn't available yet, no one knows, but this is usually the case.
What point are you trying to make? Erase all contents and settings is a last resort step and is almost never needed.
If I understood this sentence, I could reply.
As reported earlier, as of IOS5, SHSH blobs are a thing of the past. Applejuiced's post in this thread has the details.

With 5.0 and higher you cannot restore using the TU and cydia saved blobs method.

Should I quickly update to a tethered jailbreak (while preserving my baseband) to 5.0? Something specific I need to do after that? Can I then downgrade back down to 4.3 (have blobs)?

Yes, you can downgrade any time with blobs saved on any firmware version below 5.0
Its up to you, we dont really know what's going to be released and for what and when. Your guess is as good as ours.
Just asking because it seems like everyone is saying if you want a chance to jailbreak 5.0 you need to update now to preserve something, but if I downgrade, dont I lose whatever it is Im trying to preserve?
You can update to 5.0 and then later you can go down to 4.3 if you want or dont like the tethered JB.
What would you lose?
As long as you preserve your baseband you're good.
I was on 4.3.3 with an untethered jailbreak, just updated to iOS5.0 while I still can. I really hope there is a jailbreak soon. This will be the first time I have ever used a non-jailbroken device as my everyday phone. I have an iPad 2 on iOS5 but I don't use it as much as my phone.

I'm on 4.3.1 and iTunes tells me the newest iPhone software is version 4.3.5. If I upgrade to 4.3.5 now, how can I know if the following iOS5 version is 5 or 5.0.1?
Make sure you update to the latest itunes version first.
Then you will have to download the 5.0 ipsw manually and point itunes to that file so it doesnt take you up to 5.0.1
If that is possible, what stops me from upgrading to version 5 next month instead of right now?

For the next few hours or days maybe Apple will be releasing blobs and allow users to restore/update to both 5.0 and 5.0.1
Once they stop that you will never be able to upgrade to 5.0 just 5.0.1
There is no such option in itunes. They one I think you are referring to is for syncing your data and music over wifi and has nothing to do with OTA. In any event it is never going to be an issue with a JB iphone since apple built in a check to see if the phone is JB and then denies OTA updates. That is a good thing for JBs.
