For ultra portability, I like the Microsoft folding keyboard - especially if you don't plan on making typing a huge part of the experience. It folds up nice and neat, fits in my pocket and I don't have to worry about a keyboard bulking up my iPad.

I use a split design on my desk, so it wasn't a big leap for me, but I can see where it would be ackward for people not used to split keyboards!
One nice feature is that it connect to two keyboards with a quick button press (so I can use it with the mini and the Pro).
