AFAIK, you can’t. This is not the 3D Touch that can be turned off on older iPhone.
 
If you go to settings, accessibility, touch, haptic touch, you can at least make it trigger slower

What iPad has is what “Haptic Touch” truly is: long press. No haptic bs, no fancy name, just plain old long press. Nobody wants to turn off long press, so yeah. You are out of luck.

Nobody wants to turn it off is kind of a generalization. I don’t want it enabled. I don’t want to tap something in safari and get a mini window of where that link will take me.

Shake to undo has always been there for some Apple apps, but it’s never been a setting before. I’ve used it a lot after accidentally deleting a mail message.
