I think op is referring to Long Press Gestures that was added in iOS 13 and iPad OS that replaced 3D Touch.iPad doesn’t have 3D Touch never did.

What iPad has is what “Haptic Touch” truly is: long press. No haptic bs, no fancy name, just plain old long press. Nobody wants to turn off long press, so yeah. You are out of luck.Uhh I don’t have that option on my iPad. And why is "Shake to undo" in the touch accessibility section?
