I don't understand the subsidy talking point. Aren't ATT and Verizon customers simply going to make the carriers whole when they pay a $30 activation fee, whereas TMO has no such fee?

Yes they will but you are missing the point. Apple gets to advertise the phone at $699 so that it appears to not have increased in price over last year (even though to get an equivalent screen size it's actually $130 more).

Tempted to the same, problem is my iPhone SE is worth "up to $30" from Apple.

I could get at least $150 selling it on eBay I would imagine.
 
If I buy the T-Mobile model out right do I get hit with an activation fee from them to compensate for the $30 subsidy?
