Mine was on 5G auto so I did what you said and set it on 5G On and still the same.
I’m getting 180 Mbps with 5G on and 250 Mbps with 4G!

Do you feel the difference between 180 Mbps or 250 Mbps? Do you actually need it or it's just about having higher numbers. I personally won't feel any difference between those, for normal usage. The only time you would need that is if you want to download large files often.
Auto makes the phone jump from 5g to 4g when it needs to save battery life, if you select only 5g, then it will only have 5g.
The reason might also be that across the world 5g is a relatively new technology, and carriers didn't implement it all correctly yet.
I had a Hong Kong version of iPhone XS Max with dual nano sim but this time I just bought the European version of the iPhone 12 Pro Max so I had to call my network provider and switch my main line to an eSim, do you think the eSim might be the reason I’m not getting optimal speeds on 5G?

No, 250 is more than enough for what I do, even 180 is sufficient enough for me.
The issue is that my wife is getting 320 on the same network and same location so I thought there is probably an issue with my phone and the annoying fact that I have to turn one line off to get 5G on the other line, however, this appears to be a software issue and will hopefully be resolved soon from what I understood from another poster.

If you bought the phone overseas, the radio bands will be different... perhaps your carriers 5G is not actually supported with the hardware you bought?

That could explain your issue.
 
I mean it may or may not be addressEd. I don’t know. But 180 Mbps isn’t bad. It’s not like it’s 50 Mbps.

No, the phone I bought overseas was the XS Max, the iPhone 12 pro Max is just the normal European version I bought from my own carrier.
I think my issue might be software related that hopefully will get resolved with a future update or might be to do with the eSim. So I will just call my carrier tomorrow and see if I can reactivate my physical sim again just to see if I can get the optimal speed on 5G.
 
Oh well, at least your upload speed is better than your download speed 😬

When I used to have t Mobile I didn't get any reception. I am on Verizon network now.

Is your work building inside a bunker? 😂
Here’s my speed tests, one with 4G on and the other on 5G, what I also just noticed is that my upload speed is double on 5G.
