iPhone 2.1 jailbreak question, and also what's new in it??

If I Jailbreak and install a custom SMS, then upgrade, would I lose the new SMS tone? My guess is that I would lose it.

Yes, you would. I know it's tempting to "go see what's new right now", but have patience. If you want, you can use me as a guinea pig. Once I successfully jailbreak 2.1, I can let you know that it didn't brick my iPhone, and let you know. Just offering...;)
