Because most people find searching through endless pages of a thread hard, I will create this one, give me prompts to add new stuff:

1. Battery life seems to have improved (3GS confirmed)
2. Speed increase across every iPhone (startup/shutdown and launching apps)
3. You can now copy information from contacts without going into edit mode
4. You can paste a number into the keypad section of the phone app
5. On the 3GS you can keep the original video file (non-destructive editing)
6. Haptic feedback for when moving apps
7. When sending an SMS to multiple contacts in 3.0, would turn it into an MMS, this is no longer the case
8. Voice Control works over bluetooth
9. Improvements to OpenGL and Quartz.
10. There’s now a VideoEditorController API – Allows third-party apps to call up video editing UI.
11. Video picker API.
12. Small shadow under icons that are in the dock
13. MMS is enabled by default (although ATT do not support it)
14. Fraud protection in Safari
15. GPS accuracy seems to have improved on the 3GS
 
Also if you select and hold an application as it wiggles the phone will vibrate
 
Sending a message to multiple contacts no longer turns the message into an MMS (if MMS is enabled on your device)

Also, i don't know if it was already there in 3.0 but if you go to settings>general>about, at the bottom under legal is regulatory, very exciting :p

All bluetooth headsets/speakers have a call button/function buttons that when pressed/held, activate certain features from the phone.
I read this feature from another website and just played around with my bluetooth headset until it worked
 
I heard that they reduced processor speed to prevent overheating, is that true?

pictures of the dock shadow on 3.1, looks the same to me though, maybe slightly darker... ?

They didn't add a mass-delete after a search, this is made impossible because the cancel button replaces the edit one

There was shadows before, however, although these shadows are the same thickness, they are far darker and stand out a lot more
 
The only feature the iPhone is missing is the ability to plug into a printer and print cash
