Is there anyway to copy my text messages onto my computer, restore my phone as new (not from back up), then put the text messages back onto my iPhone?

you can try copying them and emailing them to yourself... that way you at least have them saved that way..

Yes and no. Yes because thats what iTunes does when you create a back-up. No because you have to restore from a previous setting to get applied.

That said, there are some apps in the jailbreak world that allow this via SSH.
