Apple will ditch something. They're not going to keep the full line of 5S and 6 going and they want a lower cost model in the market.

I don't think that's likely. If so that means Apple will be offering the 5C, the 5S, the iPhone 6 4.7inch, and the iPhone 6 5.5inch. Doesn't seem like a consolidated line up. But who knows.The 5s and 5c will stay in the lineup. They're just going to drop down one spot like always. Just imagine the 5c is the 5 because that's what it is and it's just like every other lineup.
I don't understand why people are overthinking this... There's no "leaks" of a "C" model. The 5.5" will be positioned as a different product line all together so unless they are going to keep the 4s...

Do you think Apple will limit the 5S to one storage size (16GB?) just like they did, and still do, with the 4S only available at 8GB. Do you think they'll even still sell the 5S?

Not sure what you mean about "leaks" of a "C" model, it's already released.
I don't think they will be selling any iPhone 4 or 5 models. My thinking is that the limited release of the 8GB 5C was a test run. See if folks would bite. The plan being that from now on every iPhone release will be two models. A poly based 'C' and a metal based 'S'.
As someone else indicated above, they will probably keep the 5S or 5C for those that don't want a bigger screen.

I think Apple should offer 3 models, the iPhone 6 4.7" the iPhone 6 5.5" and lastly the iPhone 5C for free on Contract.
Personally, I feel their product line ups are becoming to cluttered and will see a simplification in the next couple of years.

I agree with the above quote in general, certainly the line up for iPhone will be cluttered if they don't do something about the current line up when the two variants of the 6 are announced and released. (But I do think they have at least started to declutter their other ranges; the MBA's and rMBP's are getting there, slowly, but still getting there, probably even more so when they announce the new 12" MBA)
