The 11.1 update didn’t fix mine so I have to go through all the sysdiagnostic testing with Apple. Very frustrating!

Sorry to hear that. Frustrating. I’m glad it’s resolved for some, me included. Maybe I was more sensitive to it than some other people. Were it not resolved, I would have gotten a different phone.

Took it back, they had a look at it and clearly something was wrong with it. Exchanged for a new one. After spending some time with the new one: IT DOES IT TOO! So annoying and a colossal waste of time. So either I get used to it, or take it back and figure something else out. Not impressed!

I backed up, DFU restored as new, then tested it and it's still doing it. So my guess is they all do it, or I just have the worst luck. I guess I'll see if I can live with it, or return it and get an altogether different phone.
Settings, General, Accessibility, Display Accomodations, Auto-Brightness. Turn that to off. It’s not an issue but is part of True Tone. Also check Increase Contrast in Accessibility. You may have Darken Colors on. I do cause I get headaches from the stupidly bright icons and the white is retina blistering.

The issue I was having was different than True Tone, also not demonstrated on a 7 Plus running iOS 11. Seemed to be an issue with the 8 Plus and 11.

I am already on my second phone with the same issue and they won’t replace until I provide the sysdiagnostic again since update to determine the cause. They can’t tell me whether it’s a fault or unknown feature. I’ve already spent 6 hrs in total doing all this troubleshooting for them and still no answer. I think I need to demand replacement and if the third phone does it I want a refund!

Apple are now replacing my second iPhone 8 Plus due to this screen dimming issue! Apple have said themselves that "its not normal behaviour" for the phone. Hopefully the 3rd handset they send will be ok. If not, I want a refund!
 
This is a firmware issue. An iOS update may start/stop/change/not change it. It’s highly unlikely for it to be fixed by an iOS update in Apple’s case, but very much possible if Apple employees start working hard enough.

The only proper solution is to get the device replaced and start without a backup. Starting from a backup will lead to the same issue, possibly.

Firmware issues come under hardware issues because a DFU restore is unlikely to fix them and it affects so few people that Apple might never release an iOS update to fix.
