With the soap-opera effect turned off, watching sports or TV on e.g. cable is no different between a 60hz TV and a 120hz TV.

And it's not 1440x900 to 2560x1600. It's 1280x800 -> 2560x1600. But I see the analogy you were trying to make. :)

Just saw the new 10.5" iPad in the store today. My god I never knew 120hz could look so good. I would say this display tech is on par with the retina screen during the iPhone 4 launch. Having said that, it does make any other 60hz screen look like crap for 5-10 mins until your eyes readjust to the lower refresh rate. I would hope Apple has taken note of this and done there best to incorporate the tech into the new iPhones.

I bought the new 10.5 inch pro, and intended to keep my old 12.9" next to it- but now it looks like total garbage next to it :D

Agreed! That is what the ProMotion screen feels like! Instantly makes all other displays look like crap.

I can't remember but did any rumors for the 10.5" iPad mention a higher refresh rate display?
I don't think it was ever mentioned. Such an overlooked feature! It truly is amazing! The new iPhone HAS to have this- the ip 7+ already feels outdated now next to my iPad 10.5
