Why all the noise about camera bump? Better quality high end camera needed in thin phones. To me, no big deal. I don't even notice it.

Possibly because those making the noise about it (such as me) see things opposite of how you do. The camera met our limited needs a long time ago. Therefore all we see is continually larger camera bumps while our needs haven't changed.

An instantly removable/replaceable battery that doesn't involve dismantling the device.

Because I do not care for the look of the bump. I prefer a camera that is flush with the casing, like with the iPhone 5 (which I own). That to me looks much better than the bump. I like the look of a flush camera and that's a major reason I got the iPhone 5, that 2001 Space Odyssey monolith design.
And the vast majority of the photos I take are either pictures of stuff that I post here, or pictures taken of stuff on grocery store shelves to send to my wife so she can decide what she wants me to bring home for her. So, I really have no need for a super camera.
It's subjective, but still my opinion.

It is subjective, and prefectly reasonable. Just pointing out that other users might want higher end features from their camera, and to provide for that requires a larger lens and space to accommodate it. Apple wants to cater to everyone for maximum sales. But your point of view is understandable.
Probably greater amounts of manual control in the camera on the cameras. Its embarassing that the most popular camera in the world still doesn't have such basic features as shutter override or manual focusing. The automatic macro is incredibly picky about what it focuses on. I could perhaps understand why its not on the 'average user' mainline device but the Pro iPhone is used to make movies out of and should have these things baked in. If it means buying up Halide and bundling it into the Creative subscription so be it.
Its even more jarring when the regular Galaxy S26 not only has full manual overrides but also a very good 'Pro RAW' mode with incredible amounts of creative control. Its not for everyone but it is for me. The iPhone is the most reliable camera on the market yet relies on expensive 3rd party app subscriptions for features that should be baked in. How can a phone labelled as 'Pro' lack these sorts of features?

It's becoming a theme from other comments, but yeah make it thicker = bigger battery + headphone jack + thin/flush cameras bump.

If you were getting a cut of that subscription fee you'd also hesitate to "give" those features away.
