I'd have to get at 4G phone + find a Verizon iPhone 4S which based off the handful I've looked on eBay average around 500$.

Also, I didn't realize it was that easy to transfer iTunes music to non-Apple devices. I thought it would be much more complex.

You could sell the LTE phone for about that. If you don't want to, that's cool. It was just a suggestion since you had mentioned you were interested in the 4GB of data. IMO it's worth the extra bit of hassle to have double the data for the same price. :)

As far as the iTunes music goes, you just need to make sure it's DRM free (all of it has been for the past 2 years or so... before that you were restricted to idevices).

Searching Google, apparently they are DRM protected (which means you cannot simply drag + drop those types of media files). The good news is you can fairly easily remove the DRM from them with various free apps. So long as you legitimately paid for the content it is legal to do so.
 
You could just use the Droid 4's built in MP3 player, that'd be one less device you have to carry around. Maybe the camera will even be decent enough for your use.
