What are you going to use? iPhone-to-iPhone data transfer, restore from iCloud backup, or restore from iTunes backup?

I want to use the iPhone-to-iPhone data transfer because apparently it offers eSIM transfer, but I’m not sure if it’s an exact copy of the previous iPhone.
 
What is included when you do phone to phone?

My current phone is on 14.2 and I know in order to do a backup restore on my 12 Pro, I’d need to update it to 14.2 first.

But I’ve been thinking about restoring as new. Something I have not did...well ever. I’ve just used my backups. I am kind of curious to see if my phone runs better as “new” but really wonder if it’s worth the trouble. I’d have to download a ton of apps one by one.

Even if you setup as new, you can still do phone to phone for some stuff correct? (Photo libraries that kind of thing?)

I have some apps to not restore data in my iCloud backup, does this setting apply to iPhone to iPhone transfer, or does it transfer everything including the apps I excluded for iCloud backups?

will we able to do the phone transfer with the phone next to each other? or both HAVE to be on 14.2?

I can’t confirm, but significant location history is synced thru iCloud.

I know this, because my Mac mini and MacBook Pro have my iPhone’s significant location data, which would be impossible for my Macs to collect on their own unless they synced via iCloud. In fact, deleting a significant location will delete it on other devices.

My iPad also has my iPhone’s significant location. So I believe it will transfer or it will sync from your other devices.

That’s strange. It’s synced via iCloud. When was the last time you’ve done this? I think the iCloud syncing is recent.
 
By necessity, I'll be using the iCloud backup when I get my new phone tomorrow, as the X I have used since the day that model got launched was sadly drowned, then superheated to the point where it was almost too hot to touch by the evident resultant short-circuiting, in a water park a month ago.

(I've been using my old 6 in the interim... and have been reminded that downgrading is so much worse than upgrading is better. That's loss aversion in action. But on the plus side, I'll likely appreciate going 6->12 Pro far more than I would going X->12 Pro.... this sluggish 6 is stuck on iOS 12, for goodness sakes.😐 And knowing I'd get a new phone soon enough, I never really attempted to set up the ol' 6 to my liking, so I'll just kinda forget October ever happened and pluck my month-old X set-up backup out of the cloud.)

I'm trying the direct wireless phone -> phone, but it doesn't seem to be working: After scanning the new phone with the old, the new phone is still displaying the 'point cloud' to be scanned saying "Waiting for Other iPhone - Position this image in the frame of your other iPhone" and the old phone just has the spinning 'loading' icon. I've not been prompted for any passwords like I'd expect from watching the process on YouTube. It has been like this for ~30 minutes. Any ideas?
