I'm on 9.1 and with EE. Whilst I haven't used Wi-Fi calling recently I certainly get the indicator on my phone that it is activated when I'm on Wi-Fi.
 
I contacted EE and they said that some setting had been reset on my account and that the guy on the phone has fixed it. I won't know until I get home, but I will let you guys know.

No I haven't. Not really keen on losing my backup. I might give it a go though, just to see if it works.

You won't lose your backup. Backup as normal but after the restore don't setup to the backup, set up as a new iPhone. If WifiCalling then works you know the problem lies in your backup, if it still doesn't work you know the problem is either with the handset or an account issue.

You can always go back afterwards and restore the backup once you have checked if it's working or not working.

Yeah, the guy on the phone was very helpful, knew exactly what the problem was and how to fix it! Asked me to turn my phone off while he changed some settings, when I turned it back on, got a text message saying wifi calling had been activated, when I got home it worked fine!

Hopefully it goes the same for you!
 
Whatever the guy toggled at EE seems to have worked! I'm on wifi calling again!

It's terrible when something happens like that around the same time you updated and so thought it was a 9.1 problem. Gave you a lot of extra work with all those restores ;).
