I don’t care who you think your talking to.. I was scammed by a “granny”. Got a pair of cheap cufflinks back from “her” instead of my iphone 8+. She had much the same story, couldn’t get the phone to work. The cufflinks that got “returned” to me didn’t even come from the same state that I shipped the phone to. I genuinely hope you actually have a “granny”, watch your back though. All this messing with the phone sounds like a good way to send you back a seriously goobered phone and keep the good one.

How? I have the serial and IMEI? Apple know all the ins and outs.
I have told her to send it back 3 times now, she doesn't want to as she got a good deal
 
IF you believe her. I am not saying it is not possible that “she” is being honest.. Just that it is not probable “she” is being honest. Or that “she” is even who you think she is. I have problems with about 2% of my electronics sales. Pretty much 100% of those problems are with cell phones. Most of them present in almost exactly this fashion. Not trying to brow-beat you. Just want to make sure you get whats owed to you. Ebay will make sure they take care of the “buyer” and themselves.
 
I will also openly admit to not understanding the ins and outs of these scams. As previously mentioned. I had a VERY similar issue with an iPhone 8+ sale. Perfect phone, case from day one, completely unlocked, screen protector, factory box and accessories, the whole nine yards. Got “back” cufflinks after two weeks of arguing with ebay and being extremely polite and helpful with the buyer. Ebay would have loved to nick me for the cost as well. I don’t even OFFER returns.. Ebay is very buyer centric.
