I think you will be pretty hard pressed to see a difference in resolution in general use, (that's typical apps, including safari, mail, etc).
Its not always about ppi - the iPad Pro is about 270 ppi and nobody complains about that.
So forgetting resolution, unless you are holding it just a few inches from your face... the xs / pro screens are an easy choice for anyone who does a lot of photo work and of course wants to watch a lot of HDR content. For me, the answer is no, i don't typically do that on my phone so the standard 11 is just fine for me.
