I know it's not directly said, but I get the feeling that's what he's talking about in this video at about 1:06 Reducing the 3 surfaces to 2, as in meaning laminating the display.

I have to say I agree. I Zaprudered that clip over and over and he starts talking about the screen, then immediately after says "by reducing what were essentially three surfaces to two, we got rid of the structural wall around the perimeter of the unit and eliminated the edge". The key word is "by". They eliminated the wall by reducing the thickness by fusing the surfaces of the glass and display.

Or at least that is what I want it to mean. There is another thread on here with pretty damining evidence against this idea. https://forums.macrumors.com/threads/1110356/

I have to disagree actually. What he seems to be referring to is that they removed the "edge"of the ipad, meaning it has no trim now, as it just tapers from the screen right across the back to the other side. Its like a knife, you would say that it has two surfaces and you don't include the sharp side. Thats why he says "we got rid of the structural wall around the perimeter of the unit and eliminated the edge". That structural wall on the side is now gone. It just tapers from the edge of the bezel. It has nothing to do with screen thickness. I really don't understand why people keep insinuating that this statement is somehow referring to the screen and how this means that the screen is laminated like the iPhone 4.

I do really hope the screen is better quality and laminated like the iP4, but that statement has nothing to do with it unfortunately
