There shouldn't be any email address in your phone. All settings should be at default. When the rep brought them out to you, s/he should have taken the plastic off the box in front of you.
They do have to sync it in itunes, but this does not put any information on the phone. Anyone saying this is normal doesn't know what the heck they are talking about.
As for the first phone, there is certainly something wrong there.
I would try to get brand new replacements for them from AT&T. If they give you crap, call Apple. Tell them the story. I'm assuming you don't have an Apple store close by, otherwise you would have gone their. The phones were probably used or refurbished and they were trying to get rid of them.
If they try to refuse the return, just say it looks like you guys allowed someone else to return these, why not me?
