I went to my local Apple Service Provider and got the details from them. They will install 3rd party ram for 50.00 if you don't buy it from them but if you do then its a free install. If I was to do the ram upgrade my self will it void the warranty? since I am planning on getting apple care.
 
Someone correct me if I'm wrong, but I'm almost positive they can't refuse that service (i.e., it's illegal) unless the problem needing repair is verifiably a result of the third party component(s).

What that tech claimed is illegal under the Magnuson Moss Warranty Act, section 102(c).

I know a couple months ago, a famous youtuber had his iMac Pro refused. He even offered to pay for it (ie: not claim warranty).

Refusal to fix accidental damage isn't relevant to warranty claims for manufacturing defects.

When should I consider going from 8 to 16 and then from 16 to 32? I want to be able to play some games with a eGpu as well as start learning logic and final cut.

I personally would just go straight to 32gb if you can afford it. Both Logic and Final Cut will benefit greatly from more ram. 16gb would still be fine if you’re on a budget, but if you’re planning on going to 32 eventually, why not just bite the bullet.

Where can I get 2x32GB Ram for this for a total of 64?

(Not that I *need* that much, but since when has need mattered)? Crucial has 2x16 for $285. Wondering what 64 would cost. (Typing this from a 16GB MacMini 2011... so I want my next one to last forever).

If you don't need that much ATM, wait. The production of 32 sticks have started fairly recently, and they are still hard to find. I expect this to change in near future.

I also expect DRAM prices to finally start dropping in near future, but...well...
 
Currently I have 4GB in my MBA. I ordered the new Mini with the base 8GB. It is mostly for web surfing and office type apps, so I assume 8GB will be enough RAM. But is there a way to tell for sure?

Good rule of thumb is if you need more, you'll know you need more ;)

I decided to get the i7 with 8gb of ram. It wouldn't be my first time digging into a Mac. My first Macbook Pro I upgraded the Ram and the HDD to an SSD when I first bought it.
