One thing to check in regards to your issue with reminders going to a random list...Because this was happening to me in a way. I would ask Siri to set a reminder, to do something at a certain time. I then noticed that reminder, wasn't in the reminders list...But, it was in my Grocery list! One thing to check is go into settings, for reminders and pick a "default" list. For me, somehow it was set to Grocery. I set it to Reminders and now, they appear there...

Actually, never mind...Just realized no matter what reminder I make through the watch, via Siri, they are all getting dumped into my grocery list...lol
Same here! Except it’s even worse. At first all my reminders I made from my watch was just saved in a list I don’t use. Fine. Whatever. Then out of nowhere it’s saved to “new list”. This list doesn’t exist! I’ll set a reminder and check on my phone and the reminder is nowhere to be found. I searched all reminders as then clicked scheduled. It’s nowhere. It’s literally a phantom list.

this is just crappy because I use reminders for everything. I may not make it through the week. Wondering if this will just fix itself or if I should do something

I tried to go for a run yesterday and couldn't use the workouts app because Downtime. I don't have that set up on my phone and you can't set it up for/on just the watch. A couple of restarts and waiting fixed that.

My Series 4 takes an absolute age to turn on.

During the above, I experienced the same on my Series 3. At least 2 minutes for the watch to fully turn on.

On the phone. I have 2 Apple IDs and the older one (non-email ID) was the one where I've made most of my purchases and the one being complained about. I signed off on my iPhone X and signed back in. Have not had an issue since.

Apologies for late reply.
Yes I am in same boat. My older non-email ID is my purchase ID for everything. Other ID is just iCloud for the email and iCloud stuff only no purchases.

I had same problem for first hour or two and watch would ask for this non email ID and there was no way to keyboard it (that did not work), even tried to do a two factor with it and watch and Mac but I could not get a screen on watch to enter the code. Later I looked at the two ID's and on my new 11 Pro Max watch app. It was missing sign in for the iCloud ID only. I signed in. Watch did the same non email request a couple times and I ignored/cancelled and finally it went away asking for hours, has not come back. I think things on watch and its connection to my new iPhone 11 Pro Max were weird until iPhone propagated out info and got info back on ID's keychain act I am supposing. Hopefully this is done. It did not help that at first the watch was trying to to the two factor with the non email ID that I have set, but phone was upgrading to 13.1 at time so the two factor window came up on my Mac running Catalina and I clicked it, got number but never got a screen on watch to enter number.

S4 has some occasional frame stutters when opening and closing the clock face in grid view.

iPhone notifications for some reason work now after one day which is good.

I also have the stutter problem on my series 5. Do you still experience it?
It seems like it happened when I had the apple watch in standby mode for a while.
