Mine does not do this? When I drag a song out of my iTunes to my desktop, the file moves (or gets copied), but the icon is blank...

So it just shows the file format as a preview. Have you enabled icon file previews in Finder? If not then go to Finder, navigate to View then View Options at the bottom. Check Show Icon Preview.
