Do you really need 1080p video when you are on Zoom calls with 20+ people showing their webcam too? The quality would look no different on such a small box, and new Dell laptops have 720p cams too.

I don't think the majority of Apple customers have the time and resources to go and play with various monitors until they find the one that works. This is simply not normal nor intended by Apple. The issue with Mac OS is we always have to wait until the next patch. There's no really any means of "tinkering" in this OS. And the only way they will patch the "bug" is if enough people complain. But I guess some people here are more concerned about how to make your hardwares work for Apple than wanting Apple hardwares work for them. I thought that was the idea of Apple? M1 is good, but the issues are not normal and should be (to some extent, can only) be addressed by the manufacturer. Other than that, the solution is just a hack really.
I have reason to believe this is more of a Big Sur problem. My 2019 i9 iMac (intel not M1) is having some serious Bluetooth issues with Big Sur that never occurred on any of the other operating systems prior.
Drivers can definitely make hardware perform so bad it might seem faulty.
It's definitely some combo of hardware and software but absolutely not endemic to Big Sur on its own

A video project came up for the next two weeks and I decided to jump back in with an MBA 16GB/1TB/8C
Only one day in, but happy to report that - unlike the Mac mini M1 I had - bluetooth has been perfect with my Magic Trackpad on 11.1
I did have an unpleasant start though. I couldn't get past the initial account creation screen despite 3 complete Disk Utility deletes and re-download and installs on Big Sur.
Luckily I had another M1 here so I could put the new one in DFU mode w/ Apple Configurator and do a full restore that way. After that, I got it up and running. Super weird.

Increasing the webcam to 1080p won't do a whole lot. The focal length is going to be greatly constrained due to the thin laptop lid. 1080p cameras are available in the iMac and LG 5K displays, because there isn't a problem with thinness. Even most phones, including the iPhone, have a camera bump for this reason as well.
I hated that kept restoring my MBP finally discovered a post mentioning the hidden specific "Erase Mac" in the toolbar of recovery 🙄 Apple needs to have better documentation on M1 recovery steps or fix these weird issues, its ridiculous, have even seen some of these unable to be restored with Configurator somehow or it takes 10x before somehow for some reason it took.

a few thing I saw also change in recovery mode
1. cmd + r = not working so need to press on button on terminal(MacBook m1)
2. terminal = seem they create another os to access another os inside ? This is important if something wrong
3. they lockdown important file as read only

What loss? Have you seen the refurb store? The discount is minimal on an already massively inflated MSRP.
Some of these comments scare me.
You are perfectly right. But I think that the situation will improve a lot within nearest future. Apple GPU driver development manager mentioned on Twitter that getting external monitors to work is surprisingly difficult as there is a lot of idiosyncrasy and device-specific bugs. Given the absolutely crazy amount of different monitors out there — each with their own differences in behavior — I can kind of understand that it's not something easy to get right from the start. Other GPU companies have more experience with this, so their drivers mot likely contain all the common workarounds. For Apple, this is a new territory, and even with their resources it's not really feasible to test out every existing monitor. As more and more issues are being submitted however, it is just a question of time until the situation becomes better.
It is annoying, but unfortunately some minor annoyance is difficult to avoid with this kind of complex transition. For now, if you experience issues, don't hesitate to submit a bu report and return the machine — this also sends a strong signal to Apple that they have to double their efforts in this matter.

It was a lot nippier but the bluetooth drop outs were not just sporadic, they were happening every single day. I have a 30 minutes test later this month so if I have to waste 5 minutes or even 3 minutes restarting and getting everything working then I have no chance, can't take the risk.
I've got an old MacBook Air and it's surprisingly fine for general use so I will try and hang on until the next lot.

I didn’t even last a day.
Woke up this morning and trying to do just basic things and the machine is Beachballing all over the place.
This 16/1TB model is worse in every possible way vs the 8/512 we also have here.
I’m convinced something is wrong with this one specifically. Returning it for sure.
Not going to live like this.
