Iphone 6s jailbroken on iOS 8.1.2.
Possible to update to later version iOS and keep jailbreak or re-jailbreak?

You cannot possibly have an iPhone 6s if you are on iOS 8.1.2.

The 6s/6s+ launched with iOS 9. So, you have a 6.

That said, the answer to your question is no. The only thing you can upgrade to is the latest version of iOS 10 which does not have a jailbreak.
