What to buy and why?

I'd buy an iMac G3, because I just like the shell.
With the rest I will buy that wooden table Apple computers are on in the shop, because I can only spend it on products that are Apple's. And that table is property from Apple.

$2352.75, that's a nice chunk of change!

2012 13in MBP or 2012 13in MBA, depending which one I like more.

If I had to spend it today, probably 2 Thunderbolt Displays (Refurb = $850, so $1700), then maybe spend the other $650 on hrmm, perhaps a Mac Mini (either refurb or company/education discount).

//Already have everything else Apple offers haha :p
 
Already spending that on the top end 15" in the not-too-distant future.

Can I use American dollars instead or do I have to fly to Europe to use sterling? If it's the latter I may have be limited on my buying options. ;)

I'm happy with my 13'', even though I would love a 15'', so I would buy the new iPad 64GB 3G, an iPod shuffle, magic mouse, trackpad and a Time Machine.

Would use what's remaining balance to spend on iTunes credit.
 
1500 would get me the top-end stock iMac. I'd go for that and then be really annoyed afterwards about how tiny the HDD is.
 
What about upgrades for Apple products, such as my Late 2011 15" MacBook Pro?

I would buy two 512GB SSD's once the price comes down, an Optibay enclosure, 16GB of 1333Mhz DDR3 RAM, and a large external HD (probably 2TB) for backing up all my data. I would set the drives in my computer up in a RAID setup for super fast speeds. I would also buy an Apple Thunderbolt Display and an iPad.

This should (if I buy once prices come down) come out to around $2300 USD, the price limit set in the OP. I would have a stellar at-home setup with an amazingly fast laptop with an incredible display, and I would have an iPad for on-the-go productivity, web browsing, entertainment, and school work.

Sweet....

Edit: Does Apple stock count? I'd be in for $2350 USD worth of stock actually.

I'm pretty sure that's gonna be way more then £1500.
