Yeah, Apple doesn't sign the iOS 7.1.2 ipsw file anymore. It's impossible to roll back to that particular firmware right now.

Just get new 5S on 7.0.4 - should I upgrade to 8.1.2?

Yeah, Apple doesn't sign the iOS 7.1.2 ipsw file anymore. It's impossible to roll back to that particular firmware right now.
I have updated to iOS 8.1.2, till now everything ok besides some little bugs:
1) when I turn on 3G Data the signal strength goes to 1 line and then write "no signal". after couple seconds the signal is goes back with 3G data ON. this happens to me even on iOS 7.0.4
2) When I hear music with my Sennheiser HD219 the volume decrease a little bit and if I touch on the time length line the volume increase. That's happen also on 7.0.4. just to be sure I will continue listening to music with others headphones to verify the glitch/bug.
