I've just picked up an iPhone 6s plus and there's just a massive amount of wasted space on the lockscreen. Can anybody recommend something that isn't LockHTML or Weatherboard? I've tried both of these and neither are behaving well on my phone.
 
Honestly, anything but empty space would be nice. I used to have Intelliscreen and Lockinfo but neither of them are updated to work with iOS 9+.

You could try Personal Assistant.
 
In lieu of LockInfo I've been using a combination of "Priority Hub" and "Calendar for Lockscreen". Priority Hub has the ability to do something LockInfo never did (if I remember correctly)...clear the annoying app badge numbers when clearing a notification.

Calendar for Lockscreen shows upcoming events including all-day events.

This is better than nothing but I'm not a huge fan of the smaller clock. I also can't get the weather information to update. Location services are enabled for weather so I'm not sure what the problem may be.

Have you opened the Weather app?

Tweaks lile this and Weatherboard 2 require you to open the Weather app at least once if it's been closed. They draw their weather information from the Weather app.

I have. I've also gone into settings and toggled location services to make sure everything's current. No dice.

Edit: Aaaand I got it. Had to scroll away from Current Location and let the first programmed location load.

I had completely missed the release of Personal Assistant as I wasn't using iOS 9 when it came out. It's a nicely done tweak and I hope my $4.99 goes toward further customization. A slightly bigger font would be to my taste. Also, disabling the Reminders section (and leaving Calendars) would be nice as it's the first thing that shows. "Feed the Cat", "Take a Pill" or whatever is kind of ridiculous being there on TOP...I'll get an alert when it's time.

Also, I seem to be able to interact better/easier with the notifications in "Priority Hub". More iOS-ish, I suppose. I'm going back to that configuration and I'll keep an eye on Personal Assistant for updates.

Yeah there's certainly some things I would change like the music controls being minimized and not showing progress scrubber, and as you mentioned the size of the time/date/weather stuff at the top. It's definitely the best I've come across and will be put to use since I dropped the $5 for it.
