Would it suffice if my track count is fairly low (around 8-16 tracks?) with minimal use of plugins?
 
Do you have a MacBook right now? If so, look at the activity monitor with your current usage. Take it from there. If memory pressure is Yellow at anything with 8GB in your current setup, I'd consider going to 16GB.

I'm no expert but watching the various M1 music production reviews 1.5 years ago, I noticed some people with somewhat more tracks and plug-ins than you, running in to severe problems with 8 GB RAM. They'd get random crashes and what not. This all disappeared as soon as they went to 16 GB. Lke I said, they had more tracks and plug-ins, but I'd probably just recommend 16 GB.

If $200 means that much to you, I would consider an M1 Air with 16GB RAM over M2 with 8GB. 8GB is way more likely to be a bottleneck going forward than a slightly slower (but still solid) CPU.
