Hi, I am going to switch from windows to apple.
Which Apple product should I buy?
I have decided to use a chip computer with M1 architecture.
Or should I wait until the next-gen product launch before deciding to buy?

The most important question to ask is what are you going to do with it?

Do you need a lot of cpu or gpu power, a lot of RAM, a big SSD?
Do you want a Desktop or a Laptop?
Do you already have any peripherals that you want to use with the Mac?
Do you have any other wishes that the Mac needs to have?

There are several question you need to ask yourself before even considering a specific Mac. Questions like usage, workload type, expectations, limitations.

You should jump all the way in! To get your feet wet just get the M1 Mac Mini with 16g memory! You can always use a Thunderbolt drive to expand your hard drive space with great speeds using the tread Thunderbolt 4 NVME External Storage Speeds? and read all through it to get your best option!

Not a good way to go about jumping into a new eco system. The other 2 posts have it right, you need to first figure out what you need the computer for and what you want to do with it.
 
First question is "why?" What is your reasoning. The reason I use both Mac and PC is for the experience in both environments, development of platform agnostic mobile apps (where appropriate), and battery life. Then (as both rmgbenschop and jav6454 said), you need to evaluate your current needs. If you spend the majority (if not all) using web apps in your browser, then you shouldn't have any problems switching. If you do use desktop applications, you need to investigate if there are current Mac options available, and (arguably most importantly) if they are already Apple Silicon native, or planned to be soon. If the apps you use are not available, you should research native Apple alternatives, and see if those will work for you or not. The applications (programs if you prefer that term) will give you the answer. For example, if you need CUDA (nVidia GPGPU language) support, you simply cannot use an M1 based Mac, period. Support for OpenCL is very limited on current M1 Macs, as Apple is pushing Metal. Good luck!

Yeah, you need to tell us the following:
1) what applications you use
2) what external monitors you use (how many and what resolution)
3) whether you want a laptop or a desktop
4) the specs of your PC (processor, GPU, RAM, storage) and whether that PC is able to keep up with your work
5) your budget

Otherwise, asking us "Which Apple product should I buy?" is like if someone asked you "Which car should I buy?" without giving any more info.
