Your LG 27UP600 monitor is 60Hz max so you´ll get via thunderbolt 4 or hdmi 4k at 60hz. Anyway i think it´s better always connect it via thunderbolt 4/USB C and get for sure 10Bit color (i am not sure if hdmi 2.0 gets 10bit color) Mac Mini M2 will be fine with your monitor and no need to spend more money.

Anyone happen to catch the HDMI output specs? Apple site doesn't say much.
the exact HDMI specs for the Mac Mini M2. Apple's site can be a bit vague sometimes. But, if you're looking into HDMI stuff, check out this comparison between HDMI 2.1 and 2.0:https://hifiaudios.com/cables/hdmi-2-1-vs-2-0/. It might give you some useful info while you figure out the specs for the Mac Mini.

I bought the new dual mode 4K 32” LG OLED and I can get up to 144Hz @ 4K over USB-C to DP and up to 240Hz @ 1080p
 
I had issues with the M2's HDMI from the get-go. Screen on monitor would randomly blank out - sometimes moving or clicking my mouse would restore it, sometimes it required a reboot.
Dug about here and elsewhere online (including Apple Communities) and it turns out it's a 'known issue' - and not just with the M2. And Apple apparently in no hurry to fix it. General recommendation was to move to a USB-C output on Mini to the HDMI on monitor. Fixed issue immediately.
Too bad there's a squiffy / useless port on device and user must use up another port for a workaround, but hey, you've now got Apple Intelligence, and isn't that great?

Borderline HDMI cables will cause this.
