I have the same 1.66 MacMini and can see where you are coming from as a fellow VisualHub user.

VisualHub is discontinued sadly and it is not known whether it will continue to function in SL...

I'd go to the Hackintosh route, I have a 1.6 Atom Dell Mini 9 (Hackintosh) that is scarily close performance wise to my MacMini. Can only imagine what a decent cheap Desktop would be capable of...

iVideoConverter, despite the stupid name, looks like a suitable replacement for VisualHub. VHub is still the best though, such an easy to use and fast app.
