Currently reading OCLP instructions and downloading the 11.3.1 install package.
I'll use my spare 5,1 as a guinea pig, which has a 3.33 6 core, Radeon RX 480, and for testing, just a single SSD. No PCIe cards aside the GPU and 802.11n WiFi + Bluetooth 2.0.

Unfortunately, the twenty restarts didn't work out! At least my Mac has managed five without any problems! Previously in 11.3 I had already after one restart problems.
I had no PCIe devices inside my Mac except for my GPU. I did the update on a normal SATA SSD.

Martin Lo's OpenCore 0.6.8 package, upgrading my SATA SSD on PCIe from 11.3 to 11.3.1, got one prohibited symbol and had to power off/on. The install completed successfully after that, and I got to the login screen.
No - seems to be no different than 11.3 w/OpenCore 0.6.8. 3x successful reboots, then a progress bar hang, power off/on, 2x successful reboots, another progress bar hang, and no need to keep up the insanity.
I've had several 11.3 beta upgrades go smooth, in one shot. It happens... proof is in the reboots.

I have with oclp 0.1.2 sometimes an usb error with 11.3.1 when cold booting.
Edit: found a panic log in the oclp efi from com.apple.driver.AppleUSBDisplays
sata ssd with 11.3.1 and ahci blade with Mojave, just for stress test.

No more consistence with 11.3.1, tends to crash 1 times of 10 into USB drivers when I unplug the usb connection to the cinema display.
crashes 1 time of 3 when cinema display usb hub is plugged in.
so more usb problems with 11.3.1 than with 11.3
maybe a hint? USB?
edit: if I have just the USB Mouse connected, nothing else with a hub (cinema display and usb Apple Keyboard each has a hub) I can boot 10 plus times in a row with 11.3.1
same setup and machine when I booted 20 plus times 11.3 with all this usb stuff connected.

I'm linking the previous upgrade details, above.
I successfully upgraded to 11.3.1 while running OC 0.6.8. During the upgrade, I believe I experienced the same frozen progress bar, this time in the middle (after 15min of waiting, I gave-up and did a shutdown):
After powering up the Mac, the upgrade continued and to my big surprise, I was not presented anymore with the dreaded "You shut down your computer because of a problem." error. I performed more than 10 random shutdowns/reboots (reboot, shutdown, reboot, reboot, shutdown, reboot, etc.), no issues whatsoever.
Next, I proceeded with the OC 0.6.9 upgrade and repeated again the 10 random shutdowns/reboots, no issues. I thoroughly tested Wifi and Bluetooth functionality, everything works as expected.
While switching from Mojave to Big Sur, the Bluetooth bug is still present, I had to reboot twice as usual.

In case of USB problems with 11.3.1 I did a negative test.
plugged a whole bunch of USB thumb drives in every port and I cant even boot once!

@tsialex I'm thinking in reverse. What if a specific motherboard chip on my Mac prevents from having the issues others experience? I saw so far 3 more people who did not have any issues with the 11.3 upgrade. You have my BootROM, do you have a machine that matches all my chips or motherboard details? MX25L3205D, etc.

I'm using no hub, only Apple Magic keyboard and Magic2 mouse. I forgot to mention this before, thank you for reminding me. I also have a Scarlett 2i2 3rd Gen attached to back USB2 port, I use it to send sound from my Mac to a pair of Yamaha studio speakers.

the usb problem seems to be a bit oclp related.
I used oc 0.6.9 with cdf's config plus all my bunch of thumb drives and it booted 11.3.1 - a few times and it also crashed.
Maybe the race condition, who knows.
but it's still worth a test to test USB stuff.

Hours later and after wasting much time: OCLP does very little for me. Reboots mostly fail, cold boots mostly work.
Back to waiting for smarter people than me to hopefully get to the bottom of this for 11.3/11.3.1.
i am replying to you on Big Sur 11.2.3 running on cMP 5,1 on Sata SSD using open core and changing the config.plist file.

I just looked at OCLP for the first time, I would never use such invasive install approach into my machine. I want to know what exactly I'm installing and configure everything myself, the way I need it. Plus OCLP is very limited, configuration wise. Looking quickly at the code, it looks like it was designed for a drop-in setup recipe, which IMO is not the right approach. Not to mention they use their own OC binaries, instead of pulling them directly from Acidanthera repo.

Why people use OCLP to start with? We should always use the OC install guide offered in these forums, with a good documentation knowledge so we know what we actually do to our machines. I thought we are all using the same EFI setup.

Your Mac Pro probably has something that takes a little more time (or it's faster) to be initialised and then don't trigger the race condition, while most of us suffer from it.
Variances with the basic Mac Pro config from Apple has nothing to do with this, I have a dual B08 + a single 1.39f5 CPU tray, a single mid-2010 and a single mid-2012, all have the same crashes with very little differences.
A healthy BootROM also has nothing to do with this, since even Macs flashed with the generic firmware upgrade image also crash, I tested it multiple times and also asked @cdf to test it, with the same results.

I see, I noted at least 3 other users not experiencing any race conditions. I was wondering why are are special, what could make our machines faster or meet the non-race conditions?

Can you test it with a regular USB keyboard and turn off the Apple keyboard and mouse?

I used several times the original Apple wired keyboard/mouse, no issues. That’s how I fix the Bluetooth bug in Big Sur, when I switch from Mojave. I don’t own any generic USB keyboard, only Apple. I do use a Scarlett 2i2 USB2 audio interface, functional in Mojave, Big Sur and Windows.

1) What's your exact hardware spec. If your signature is up to date. Then we know two X5690, 6x16GB DIMM, and a PULSE RX580 (which ROM? If that's a dual ROM card).
Please forgive my laziness to search the old posts. NVMe, Allegro, BCM943602CDPAX still there?
2) What's connected to the cMP, and which port?
e.g. a Monitor connected to the RX580's left most DP port, and the Scarlett 2i2 USB2 audio interface to the front USB 2.0 port, etc.
3) Where you install OC?
e.g. SATA SSD connected to upper optical bay.
4) Once you have the answer for the above three questions. Do you know if there is any similarity with the other three users (that not suffer from the race conditions) you know?
