How can I keep a program running when my mac is asleep, and if there isn't a way is there a different way i can have the monitor off and still leave a program running on my mac without the monitor on?

No apps will run while your Mac is in sleep mode. If you want to keep your Mac on with the lid closed and no external display, use InsomniaX or InsomniaT (rebuild for SL) (fix for 2011 MPBs)

It would be helpful in giving you an accurate response if we knew what exact Mac you had.

Shift-Control-Eject will turn off the display.

And/or set just the display to sleep; leave machine sleep set to "never".
