As I said before, it depends on the employee who did the transaction for you because some people had to choose either educational coupon or mover coupon when they tried to apply these coupon with the Ipad Air deal 2 weeks ago.
 
RAM is not upgradable on these machines. A buyer will be stuck with 4 GB. There is speculation that Yosemite may not perform well on only 4 GB.

The speculation is not true. I am using MBA Mid 2012, 4GB, Yosemite Dev Beta 5, everything working fine and fast!
 
Am I understanding this correctly? I can get a 13 inch Air with the 128GB SDD, take $150 off with the sale, then another $150 with the .edu coupon and stack the 10% movers coupon and get the Air for roughly $700? I also have a $100 gift card for upgrading my phone, so that means I'd get it for $600 if I figured right.

Can anyone confirm that my scenario above works?

Yes that has worked for most people. Some have had some challenges in getting the 10% movers coupon to "stack". But other coupons/discounts definitely stack... I was able to get an 11" MBA for $450 using that method.
