I Have two external monitors that connect to my MacBook Pro and use those and the internal screen at the same time. While I could do with just one, more screen estate speeds my work up - but that’s just me.

I use a 15 inch MBP, never needed more power even when video editing. Only issue is sometimes I wanna game/stream but I get over it fast. (wouldn't wanna do that on a laptop this thin) But it handles general gaming just fine. I do miss a monitor sometimes, may have a setup available for when I wanna set something like that up (with as few wires as possible) but yeah imo these days laptops are just fine for most all work except maybe 3D type stuff. Even then it can probably handle it with the right hardware, fans just may get annoying.

What all games do you suggest for the Mac? I want to get into gaming really bad but don't know where to start.

I could also try windows on bootcamp to game if that's a better setup. I'm running the base model 2019 so no 8-core or high end graphics.
 
Even 15" screen is a lot smaller after iMac's + additional 4K display. You need a big external monitors for comfort work. Therefore, no laptop can replace a desktop setup in terms of comfort.

It’s big enough and comfortable for work for me. No issues

I just play Riot and Blizzard games that are free mostly. They all seem to run fine in MacOS for me but I also have Windows bootcamp installed. If I play in power saving mode in Windows the clients are laggy but the game runs fine and much quieter and cooler which is better for the laptop...at the cost of a little annoyance when waiting for a game.

What would be the practicalities of buying one of the new Pros to replace my ageing Mac Mini. I have two decent monitors with DVI or HDMI connectors and an Apple USB keyboard - what am I looking at to use the Pro with these (as well as a portable of course).
For light to moderate tasks, it should be fine. Mac minis use laptop hardware anyway...so it shouldn't be any big deal. There will be a bit more fan noise, but that should be the only negative.

ALSO IMPORTANT: Be sure to use it on battery once every month or so to exercise the battery. Otherwise, the battery will most likely fail prematurely as they are not designed to sit at 100% for their entire life.
