I wish they would add a freaking hint of contrast in apps like Mail so the folders bar, commands up top, emails/folder summary, and email preview didn’t all blend together in a complete white-out!

As a former iMac 5K owner, I definitely sympathize. The 24" M1 iMac is really really nice, but to me it was like going down from a king sized bed to a queen: technically big enough but you can't quite spread out the way you want.Alas, my 27” Retina iMac (which is still awesome) will longer support Ventura and there is *NO* 27” iMac replacement.
I’m all over that and have been since day 1. It resulted in no real improvement. In fact, it is kind of a step backward because all it did was add some black bordering that makes mail look like something from Windows 95. The entire mail app is a constant shade of white either way.

You don't have to use it, you won't get arrested by the Wallpaper Police if you decide not to use the wallpaper that ships with the OSI agree. The wallpaper is too bright for my eyes. Too much going on!
I'd check your display settings. While I agree there could be more contrast, to say in a complete white out is incorrect, unless you have your display settings really messed

Ever since Mac Music went to the minimalist flat red on white amaterish unfinished interface with iOS7 and Yosemite, it’s been a non-starter disaster. User ease out the window, and for what gains?Not to mention the snowblind look in Apple Music on the Mac.
Just lol at the "designer" who thought this was a good UI.
