Haven't seen any predictions for an Aperture update, but they better get this out the door soon or Lightroom is going to eat their lunch.

I agree, Aperture needs an update quick ... I have been using Aperture since day 1, I've been a huge supporter or it, I'm an author on O'Reilly Media's "Inside Aperture" blog .... but a few months ago I switched to Lightroom, I could no longer ignore the superior product.
My amateur predictions include:
Updated Mac Pro with and 8-core standard (2.5, 2.83, 3.0, 3.16)
Based on price info from Wikipedia, the quad-core Harpertowns are in the same price range of the dual-core Woodcrests. The processor speeds would be those if they used processors from the new line that hit the same price points as the old ones.
Redesigned MacBook Pro with Penryn (2.4 & 2.5 with 2.6 BTO)
- Black Apple logo
- Keyboard redesign to new style

Leopard 10.5.2 with more UI (Stacks!) options
One more thing-ish: 2nd gen AppleTV & iTunes 8 with movie rentals

The consumer products usually get refreshed afterwards, so stuff like:
- iMac Penryn bump (2.1, 2.5, 2.8)
- MacBook aluminum redesign with Penryn (2.1, 2.4)

-- $999 MacBook without optical drive instead (NOT an ultraportable, just what it states: no more, no less)
-- One SuperDrive model
- Mac mini
-- Low end bumped with 2.0GHz
-- High end bumped with 2.1GHz Penryn

That's a good start, better than some I have seen.
The 2.6 GHz chip better not be BTO on the MBP, and hoping for more features on that 17" other than a bigger screen. Maybe even better battery life.
The Mac Pro updates seem reasonable, hopefully the price can start at $1800 for all the headless Mac whiners out there.
The Macbook Pro would be 2.5ghz and 2.6ghz. They are at the same price points as the 2.2 and 2.4 when they were first released.

How about an iPhone that isn't locked to AT&T here in the states. God forbid Apple wanting to make acquiring their phone a pleasure. As soon as Verizon laughed at Apple's ridiculous offer they should have headed over to Sprint.

S3200, the format will build on the same connectors and technology used for today's FireWire 800 but operate at a peak of 3.2 gigabits per second, or 400 megabytes per second; this is four times the 800 megabits and 100 megabytes possible through the earlier standard.
The IEEE 1394 group says it will begin to ratify S3200 in January but should complete the process as soon as early February, clearing the route for shipping products later in the year. No company has officially committed to updated FireWire products, though Apple is the only major computer maker that currently incorporates FireWire 800 as a standard feature on some of its systems, including the aluminum iMac, MacBook Pro, and Mac Pro.
