I've switched it off because of the time it takes my TV to regonize the source every time I play something. And the HDR only looks good in things where it was intended. So I'm back to 4K SDR.
...so you're stuck watching 24p content at 60p. Of course it takes it a moment to switch. Welcome to the way it's been for home theater enthusiasts from the beginning.
 
just leave @ 4k SDR as default and switch on match frame and dynamic range.

Again, I'm sorry for my ignorance, but if i take the advice above, what does that mean?

Will it still switch to 4K HDR for any movies i choose to play from iTunes?

Or by doing this am I missing out on true HDR?

As long as you have enabled Match Dynamic Range then yes it will auto switch to HDR for the relevant movies.

That makes Hoosier's comment above a bit confusing to me.
If I leave it at 4k SDR:

Or was Hoosier just saying that because that user was leaving it at 4K SDR, AND also wasn't turning on "match dynamic range"?

He was talking about framerate. You about HDR. These are two different things. But Apple's latest addition of "match..." settings has brought one change: now aTV will output anything as is encoded in the media file itself. This applies to framerate and/or HDR respectively (2 separate settings).
Before tvOS11.2 update (or when leaving the "match..." settings off), aTV will ignore both framerate and HDR settings in the media file and will automatically convert output to whatever format you had selected in Audio & Video Settings.
Frame size (2160p, 1080p, 720p etc) it will still need to downscale, if you select such a setting. But framerate and HDR will be set to settings directly obtained from media.
