Let's see...

Faster
Uses far less memory with all the same tabs and extensions enabled (around 1/3 the total Chrome uses)
They stripped out all of Google's tracking services, using strictly the rendering engine
To that previous point, there's far more Privacy settings that are very easy to find, like Brave, to give more granular control
Has PlayReady DRM in addition to WideVine, so you can use it for more media sites
Tracking Prevention (like Safari) by default
And for those in an older Enterprise Corpo world... IE mode
Aren't the first two things just Chromium?

Safari is what I use the majority of the time, because it’s just way faster than Edge. If ever a website doesn’t work with Safari (it’s happened to me like twice ever), I use Edge. Firefox is just terrible, and Chrome is incredibly bloated.

Nice to see, I want to see more xbox support on Mac, like xcloud for the Mac. At least I can play on a remote server games. And a xbox series X app for the Mac.

On paper it's compatible with _all_ Chrome extensions, since you can install extensions from the Chrome store. But there are also many adblockers in the Edge store, I personally prefer uBlock coz it works on YouTube in-video ads.
I suggest using uBlock Origin, not uBlock, which was bought out. There's some drama there.
In July 2018, uBlock.org was acquired by AdBlock[19] and since February 2019 began allowing "Acceptable Ads",[20][21] a program run by Adblock Plus that allows some ads which are deemed "acceptable", and for which the larger publishers pay a fee.[22]

I love Brave, but I'm not surprised at all. Their software updates are slow and ropey. How long was bookmarks sync disabled for, after they found a bug that wiped bookmarks? 6 months?
Totally non-technical, but because I've heard ads for Brave on FM radio, I'm not going to use it ever. Something that truly protects your privacy will not be advertising that hard.

Since making that decision, I've also learned that their business model is based on an altcoin they created and that they've been messing with web content to insert referral codes. So my instinct was right.

Installed on my M1 Mac mini from the Canary channel.
Rendering speed is much, much better than the emulated version of Edge running through Rosetta 2.
However, it's not much faster than Safari, if at all.
On the other hand we have Firefox for M1 Macs which blows both Edge and Safari out of the water, as far as rendering speed is concerned, in my subjective opinion.

I have adblock running on mine, works fine. EDITed to add, I haven't tried this version on my M1 'pro so I'm not sure if it works on this release. Works fine on the normal Edge browser on MacOS though.
I installed the Canary channel build of Edge on my M1 Mac mini, along with the Ghostery adblocking extension and both work just fine.

why do they persist in writing a browser no one is asking for?
it is just pride that they blew the lead they had with Internet Explorer?

first thing anyone does when they get a new computer is download Chrome or Firefox.
Last time they use Edge.

Outlook is nearly as bad. The things they did dumbing it down in Windows 10.
I still cant find settings that used to be easy to find in Win7/8. 10 was not progress.
Only still around because most businesses use it and the Calendar bit still meets needs for them.

It's nice that Microsoft supports the M1! :) (even if I personally don't use any of their software, except Remote Desktop)
The one thing people need to get out of their head is companies don't do things for the goodness of their heart or to "Help" companies by creating supporting software. Microsoft sells subscriptions to 365 and there are lot of Mac customers that subscribe to it. Because of this Microsoft is pushing their browser with no hesitation to penetrate the market. Please acknowledge Business 101.

And where is your proof that no one is asking for Microsoft's browser for Mac?

Oh really? Maybe people on tech forums but in reality people tend to use the browser that comes with their computer. Unless you can show proof otherwise?
