That’s a very old blog. CCC5 works perfectly with high sierra and APFS.

Not to be repetitive of what others have said, but here is my advice:

Excellent instructions by LarryJoe. For completeness, since the OP mentioned he has never done upgrades, I just wanted to point to an instructional video (one of many out there). The hardware job (SSD upgrade) should take no more than 15 minutes, once all the required tools are in hand.

Cloning using CCC:

SSD hardware upgrade (ignore cloning instructions in this video):
