guys - i have a ton of mp3 files I want to play on the iphone. What's the best way to move them to the phone? I tried connecting the phone to my windows and itunes gave an error that I could not fix. Any other way of moving the files over? Also once I move the files, will I be using the apple music app to play them or need another app

You need iTunes to play music using Stock music app. Or, you need to Download another app to support your playback on your device. Some file managers like Documents would do the job. Dedicated music app are like VLC, foobar2000 would also do the job. nPlayer (paid) is also good.

Importing thru iTunes is the only way.
 
iTunes is the best option. Try to fix the issue or ask here for help.
 
It actually is. Unless you SSH into the iPhone, only iTunes can drop in musci files to the iPod app.
But he can store music to other music apps that supports local storage (aka, its own library), then play from there. He does not need to only use iTunes to play his music.

In that case he'll need whatever companion apps the other apps have or drop them into a internet based cloud storage and play from there. But if he wants nonetheless to do it via computer, then iTunes is the only one.

Again, you can bypass iTunes if you know how to jailbreak and then tunnel in via SSH.

What if he just want to Put music ON THE DEVICE and play from there? I am sure this is what OP means.

You can't put music on an iPhone without a destination. Like I said earlier, you can only do that with SSH. If you want to put something in via a computer to a non-jailbroken iPhone, it has to be thru iTunes.

You can grab pics out, but nothing goes in; unless iTunes says otherwise.

Some apps provide a web interface to put music in. nPlayer does some great job here. Once share option is on, you can put whatever file it is supported (or not) through web browser. Creating folder is also supported. No need to use iTunes to transfer music to the phone. No need to jailbreak.

And again, no need for your “internet based storage”. Just a computer, a router, and connect device to that router. No internet required. Enable share feature, type the local address in the browser, start uploading files.

In nPlayer, it is called “Wifi transfer”.

Waltr or Waltr 2, but it removes my custom lyrics and doesn't transfer playlists (or I just didn't figure out how to do it). Works via USB or Wifi, reliable and really fast.

Another and free option is SyncIOS.

And the behavior of your iTunes is obviously abnormal, you can repair it with some googling. Use the error messages. Sometimes reinstall isn't enough, you should reinstall all apple related support files.

Last time when I had same problem, the solution was reset my iPhone and sign out and in to my iCloud account. Someone else suggested to sign in to a foreign App Store. (The problem was Music app crash on start.)

Just don't give up!

As the developer of WALTR, I'd like to confirm that yes, iTunes is not the only way to transfer music into the stock Music.app on the iPhone. WALTR was made exactly for this purpose – to simplify the experience of transferring media into iOS devices. No iTunes involved or external converters in case you have unsupported formats.

Though if you don't care about having the interface as simple as possible – there are quite a few other solutions like iMazing, SynciOS, etc.. You'll find a lot of them via quick search in google.
