I have a 5s connected to 5ghz router as i type this, so yes the 5s even my 5 works on 5ghz!!
 
So I could name it 5G and then manually connect to it like any other hidden SSID?

Any advantage/disadvantage using 5GHz vs 2.4GHz?

Too many to list here. But I'll mention a couple that I find important:
  • 5 GHz range is less than 2.4 GHz
  • 5 GHz cannot penetrate objects (walls) as well as 2.4 GHz
  • 2.4 GHz may be more congested

Also, depending on your router, other slower devices connecting to it may slow all devices down to that lowest speed.

To reinforce. I use this general rule.

Small apt/condo? 5ghz
Large suburban house? 2.4ghz
