Well since Canon hasn't upgraded their software since 10.4 use the shareware

I have an old cannon scanner (10yrs old I think) and after trying a few things bought VueScan. Its one of the few bits of software I have bought, and its great! I use the scan to PDF function alot myself for making electronic copies.
As for image software....
Gimp - free , powerful, similar features to photoshop, however can be a little buggy and slow (unless its improved)
Picasa - free - pretty good.
Acorn - £30 - I bought this in a "bundle" with other applications for about £25. I wouldn't say its the most featured editor, but I have found it very quick and easy to use to achieve most standard image editing tasks. It has become one of my favorites. (see App store)
As for ensuring images cant be grabbed.. Tumbleweed is right.. If you can view it on the screen it can be grabbed, if you really want it. Have you thought about watermarking your images in a discrete way?
Email addresses, Windows stores the contacts (addressbook.db I think) and you need to import these to "Address Book" on the mac. I have a feeling I exported them in outlook into a standard format before importing them into the Mac, to ensure no issues. But its couple of years ago and I'm not quite sure... All I know is I had everything importent installed and running in about 30 minutes. The rest was data.
Also.. something for you to look at if your constantly doing the same action with images is "Automator" Very powerful program, that I really should learn to use more. essentially it can take functions from just about any program ans put them in a sequence to run...
One thing that took me a while to realise when I switched was that.. with all the little programs and tweaks I had on windows for doing stuff, the Mac did almost everything I wanted out of the box with only a few exceptions.
