Apple can't sell what it doesn't have. And no selling means no profit. And they hardly need to generate interest in Apple products via artificial means. So, the marketing ploy thing is all nonsense.

It's not surprising. I recall reading that cellular models only account for a very small percentage of iPads sold. High capacities also sell fewer units. So, it's not far fetched to assume that Apples stock of 128gb lte models is super tight compared with any other.

Now that all the cell providers are offering special payment plans it wouldn't surprise me if cellular models have seen an explosion in popularity, especially higher capacities since the month to month difference is minor.

When iPad first released, the higher storage capacity models always were the easiest to find. Now it seems like with HD movies, HD tv shows and apps taking up a lot of space, people are going for more space now.

Also a lot of people are using iPads instead of laptops as their portable computing device.

I fall into this category, and it is perhaps indicative of the trend you describe; which is pretty interesting if it indeed is the case.

I know that for me, Laptops now seem like old school and i don't even really want mine any longer, although I find parting with it will not come easily, as I'm so used to them serving me.

It will have to develop some dust (a cobweb would do it, yep) :D
