There used to be an option to disable the annoying speaker in the Force Touch trackpad, seems like it's gone on the 2018 MacBook Pros (on the latest Mojave Dev Beta).

Just wanted to confirm if anyone else is experiencing this?

Silent clicking has not been an option on any of the MacBook Pros from the Touch Bar era because they have the second generation Force Touch trackpad which works differently to the trackpads found in the 2015 Pro, 2015-present MacBooks, and the Magic Trackpad 2.
 
I have a 2018 MacBook Pro. I am not sure what you are asking about but if it is just tap to click it is an option and it works. See the screen shot from my settings pane.

U miss it on the 2016 macbook but they removed it on the 2017 one not new issue

I was actually very curious as I demonstrated it to my friend a while ago on my iMac Pro, but when I wanted to show it to him on the new MacBook Pros in the Apple Store I realized that the option is missing.

Yep. With my 2018 15" the option does not exist until I turn on my Magic Trackpad 2, and then it shows only while it is connected, and goes away once disconnected.
 
2015 was the last year to have silent. 2016 onwards they changed, just like someone said earlier.

On a 2017 and 2018 there is no option, it's no longer possible.

AS others have said it's not available on certain models. My 2018 MBAir has it but my 2017 MacBook Pro 15" touch bar doesn't have it (Apple got rid of the setting for some reason, maybe because of the size of the trackpad on the 15" newer model I'm just guessing though. (I HATE the cheap sound of the 2017 trackpad) sounds all tinny and cheap....
 
I have M1 Air, option is there, and it does something but not as much as the 2015 MacBooks.

I also have talked to someone online with an M1 Air and they do not have the option at all .....

Ironically, the trackpad is extra clicky on these models, so of course I went into preferences looking to turn on Silent Clicking as I have it set on my M1 MacBook Air, but Apple feels as though we don't need it - and they know better than we do, then MacBook owners. I always use tap to click, but actually clicking is a thing at times.

Having tried the 1st Gen M1 MacBook Pros on release, I noticed that the sound of the click was very hollow, like I was knocking on an empty tin can.

Would you describe the sound you mentioned on the new 2021 MBP as similar?

I would say the click sound on (my) 14" is a bit on the hollow, tinny, clicky side, whereas the click sound on my M1 MacBook Air has a more satisfying quiet thunk (with silent clicking turned on).

However, I've noticed that trackpad clicks can sound different from one machine to the next (same generation), so I guess there are many mechanical (haptic?) factors involved with how each will sound. Another 14" may sound different, less clicky.

But, Apple wants there to be clicks with no option to suppress them a bit, so... let it be written, so let it be done.
