When Start Workout Reminder is enabled, Apple watch will remind you to start a workout if you're running, walking, swimming, on the elliptical or on the rower.

Was biking yesterday. I tend to forget to end workout. After 3-4 minutes of walking I remembered but watch didn't notify me.

I mean, it's pretty easy to discern my pace has gone down a lot and I started swinging hands. Too bad, was really hoping for it. I have once forgot to end biking workout and remembered only after 30 minutes.
 
I wouldn’t want it to notify me every time I’m just walking. That’s not exactly a workout.

Normal pace walking wouldn’t be classed as a workout. I’ve never walked leisurely with my arms swinging.

Speed that walk up to a pace that’s raising the heart rate & glow of blood & most definitely classed as exercise. Once a certain pace & the arms will move , this is what should then start to trigger the automatic start. Increased pace , increased heart rate , increased arm momentum = C’mon Siri start this workout for me. It’s not always doing this so imo still too hit & miss.
 
LOL! Not moving to Fitbit. The Versa was a horrible failure/joke on it customers. I like This app but their hardware is horrible.
LOL! Didn't ask you to move to Fitbit. I simply told you that the Fitbit Charge HR has been completely flawless in automatically detecting the beginning and end of a workout. If Apple cant do it, there's a flaw in their hardware or software, because a $150 Fitbit absolutely nails it.

It was well after 5 minutes when my alert came.

For a watch that can do so many other things,the cycling aspect of it is sub par.
 
Did it retroactively adjust map, time and kcal?

No

I also had Strava running on my Wahoo computer and have a six minute time difference

Although Strava does auto pause. aka “cafe time”

Raise to speak has gotten better for me than the early betas, but fitness auto start has maybe worked twice for me when I don't intentionally start a work out.
Raise to speak doesn’t work for me. I still have to say Hey Siri.
 
It is utterly flawless on a Fitbit HR Charge. Thousands of workouts, all autostarted and auto-ended.
This is one thing I was really hoping that os5 would bring to the watch. My Ionic was awesome at picking workouts up after the fact and generally really close with the timing. I am not going back to Fitbit because I like my S3 quite a bit after a few weeks, but hope someday the AW reaches parity with Fitbit in workout detection.

That was the main thing I worried about.

I've been using Fitbit for years now and have been really happy with the workout detection, the step counting, sleep tracking... really everything it does. I got the watch for additional functionality beyond purely fitness tracking, but I really don't want to take a step back with that functionality.

I wonder if I'm going to be that guy who wears both for a while.
