The status has been : Calculating time remaining for almost 30 minutes now. This is on a 2017 MBP. Is it normal or should I do something ?

This is the exact same scenario I’m looking at...Late 2015 Retina iMac with a Fusion drive.
 
Update completed with success.
Everything seems to function perfect.
I didn't get to choose to upgrade to APFS - it was done automatically.
But I did convert my external SSD to APFS manually in disk utility without moving data first.

So I'm happy and ready to sleep now.

Well, it seems the Safari Technology Preview does not run, in addition to the Server app. YMMV.

In case folks have not discovered it yet, the caching server is now hiding under Sharing. I have not found the other bones of Server just yet.
